A culinary experience perched atop the majestic cliffs of Ammoudi, stands as a testament to the sea’s finest and the artistry of dry ageing*, it combines the eagerness for the ‘fresh’ and the patience for what we establish as ‘mature’. The very name, derived from the Greek word ”άλμη“, echoes the salty mysteries of the sea.
Here, on this sacred ground, the concept of fresh and dry-aged fish takes on a numinous aura, organically imbued by the ethereal surroundings.
The restaurant also offers private dining at the guests’ suite veranda.
* The dry ageing technique is giving a buttery texture and a complexity of flavor to the fish.
